Cuban Black Beans and Rice

This dish was inspired by a recent trip to Southwest Florida. We found the cutest little Cuban restaurant that is extremely popular with the locals and for good reason! The food is so flavorful and colorful and just plain delicious! If I lived in the area, I would be there probably every other day to get a giant bowl of their black beans and a side of tostones (fried plantains).
